Here are a few ideas for sugar-free treats that will delight every mom on her special day.

 

1. Gluten-Free and Sugar-Free Lemon Cupcakes
Soft, aromatic, and fluffy cupcakes are always a good idea for dessert! They are easy to make, healthy, and exceptionally nutritious!

Ingredients:

  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 3 eggs
  • ½ cup almond milk
  • 1/3 cup coconut oil
  • Zest and juice of one lemon
  • 2-3 drops of vanilla stevia 0 kcal by LoCCo
  • 1/3 cup erythritol

 

Preparation:
Preheat the oven to 180°C and prepare a muffin tin with paper liners.
In a large bowl, combine the dry ingredients: almond flour, coconut flour, baking powder, and salt.
In a separate bowl, beat the eggs, then add almond milk, coconut oil, lemon juice and zest, vanilla extract, and erythritol.
Combine the wet and dry ingredients and mix until the batter is smooth.
Fill the muffin cups ¾ full with the batter.
Bake for about 20-25 minutes, until the cupcakes are golden and springy.
Once cooled, they can be decorated with a sugar-free lemon glaze or fresh fruits.

2. Date and Nut Energy Balls
These are the perfect sweet snack, ideal as an accompaniment to an afternoon coffee with your mom. No oven is needed, and they can be made in a few minutes, making them great for a last-minute treat.

  • 1 cup pitted dates
  • 1 cup almonds
  • ⅓ cup Nutchup peanut butter
  • 2 tablespoons cocoa powder
  • 1 tablespoon coconut oil
  • A pinch of salt
  • Coconut flakes for coating

Preparation:
Soak the dates in warm water for 10 minutes, then drain.
Finely grind the almonds in a food processor.
Add dates, cocoa powder, peanut butter, coconut oil, and salt. Blend until smooth.
Form small balls from the mixture and roll them in coconut flakes.
Store in the refrigerator to firm up.

3. Fruit Salad with a Mint Twist

Preparation:
Mix coconut milk with chia seeds in a bowl and add a few drops of vanilla stevia 0 kcal by LoCCo.
Let it sit in the refrigerator for at least 4 hours, preferably overnight.
Serve with your favorite fresh fruits.
